Meet the Saint Nectaire: a flat, semi-soft cheese from the Auvergne region, France. This cheese carries an AOC quality mark and is therefore produced from raw milk from a single herd of Salers cows. As a result, the cheese reveals aromas of nuts, hay, mushrooms and wild flowers.

Description / Saint nectaire

Thanks to the milk from the herd of Salers cows, the Saint Nectaire is a creamy, full-bodied cheese. The wild flowers that the cows eat, in combination with the rich volcanic soil at a minimum height of 1000 meters, are always reflected in the cheese. A creamy, full flavor that is earthy and nutty. The crust tastes like a combination of salt, walnut, spices and copper. The peculiar pungent smell is due to the ripening on rye mats made of reed.
